[Clayart] Demostration on Screen

I need a little advice on what type of camcorder to use to show pottery 
demonstrations live on a screen using a data projector.
We have a Optoma H183X data projector and would like to be able to use 
it to feature live demonstrations so that our members can either look at 
the actual demo or at the screen...
Not for a great big hall with hundred in but a smaller gathering perhaps 
up to 30 people.
Sound: probably need to 'mike up' the demonstrator - or?!

I see a great range of camcorders, from ones costing less than £40 
(Sterling) to many costing much more. No idea where to go and the people 
who sold the data projector say they know nothing about video(!) and 
Jessops camera people told me they don't know either (!!!)
