Hi Bob - 
There are a variety of products for sealing concrete, and I would think one of those would be ideal.  Some of those products develop a gloss, but it sounds like you want to retain the dry surface. I know that there are concrete sealants that soak in and leave the surface looking natural.  Go to a good hardware store or building materials dealer.  If you go to your local home improvement mega-warehouse, be wary of advice you get from the sales people.  Read the labels carefully.

I am doing some work that has such a dry surface that I would like to consider using a sealant - after the piece has been fired to temperature.
Does anyone have any suggestions what would work on an off white surface that would not materially affect the color?
